Can I hide Shopify Payments entirely?
You can hide individual methods within Shopify Payments. Hiding the whole gateway is gated by Shopify's policy.

Does this affect express checkout (Shop Pay, Apple Pay)?
Yes. Express methods are first-class — you can hide them via the same rules.
